ESSENTIAL FUNCTIONS AND KEY RESPONSIBILITIES
o Prepare a selection of rolls and breads
o Prepare a selection of specialty items
o Prepare a selection of bread art
o Prepare all breads and desserts ensuring that these are cooked to the proper degree.
o Set up daily mis-en-place.
o Produce food of high quality according to standard recipes.
o Assist with the preparation, presentation, decoration and storage of dishes and food stuffs in the following sections:
Garde Manger
Appetiser
Pasta
Grill
Saut
Desserts and Pastry
Bakery
o Assist with the preparation of:
Meat carving
Marinades
Sauces
Garnishing
Buffet food and storage
o Communicate politely and display courtesy to guests and fellow employees.
o Communicate to his/her superior any difficulties, guest or employee comment and other relevant information.
o Attend and participate in daily briefings and training sessions as scheduled.
o Prepare in advance: food, beverage, material and equipment needed for the service.
o Clean and re-set his/her working area.
o Store food in designated containers and storage areas to prevent spoilage.
o Prepare a variety of foods according to customers' orders or supervisors' instructions, following approved procedures.
o Package take-out foods and/or serve food to customers.
o Portion and wrap the food, or place it directly on plates for service to patrons.
o Place food trays over food warmers for immediate service, or store them in refrigerated storage cabinets.
o Inform supervisors when supplies are getting low or equipment is not working properly.
o Assist cooks and kitchen staff with various tasks as needed, and provide cooks with needed items.
o Stock cupboards and refrigerators, and tend salad bars and buffet meals.
o Make special dressings and sauces as condiments for sandwiches.
o Distribute food to stewards and stewardesses to serve to customers.
o Perform related duties and special projects as assigned.
